Philosophy

Distillerie des Marigots produces fine, high quality, craft spirits that showcase the richness of the surrounding Gaspesian terroir. This terroir is rooted between sea and mountains. It is rich, varied and scarcely explored. We work with what grows in its fields and forests, riverbanks and coasts.

In his ongoing search for new herbs, fruits or material to distil for future recipes, Distillerie des Marigots’ master distiller collects the leaves, flowers and roots of newly identified seasonal plants. These ingredients are then studied by distilling them one at a time to fully understand their characteristics once their aromas have been transferred to the alcohol. Each of the botanicals adds its own distinct nuance; the Gaspesian terroir brims with these botanicals.

The master distiller also seeks out producers of apples, pears, maple syrup and any other material that can be transformed into alcohol. He is always on the lookout for opportunities to develop spirits around flavourful, high-quality, typically Gaspesian ingredients.

Working with local artisans and the community

Working with producers and processors in the Gaspé is especially important to us. We work, for example, with Gaspésie Sauvage harvesters, true specialists in everything nature has to offer. They gather ingredients of incomparable quality with the utmost respect for the resource. We also work with local farmers who grow certain ingredients. Several projects are in development to showcase what they produce.

Proud to live on the Gaspé Peninsula, we are involved in our community, which we try to impact positively. Our involvement includes the production of hand antiseptic liquid during the COVID-19 crisis in the spring of 2020, our membership in Gaspésie Gourmande, Tourisme Gaspésie and the New Richmond Whisky Club, as well as our agreement with the municipality to allow a walking trail to pass through the distillery grounds. And there are still many other community projects on the drawing board!

Sharing and transparency

Distillerie des Marigots is a craft distiller, which means that each batch produced is different. This is particularly evident in the production of whiskies and eaux-de-vie. In the interests of sharing and transparency, the important parameters associated with the production of each of these batches will be available for consultation. It will therefore be possible to know the type of grain and yeast, fermentation parameters, distillation data and details of ageing and blending for the spirits we produce.

The inspiration for the distillery’s name

The name Distillerie des Marigots was inspired by an old Gaspesian fishermen’s expression, forgotten over time: “aller courir les marigots”. This expression referred to the behaviour of some fishermen who, instead of going out to sea for a hard day’s work with the others, would take refuge, out of sight, in small bays or creeks along the coast, called marigots. There, they could then take it easy and enjoy the sun and the joys of life. Faithful to this image, the distillery inspires to be a place where people can take a break, forget their responsibilities for a moment and enjoy life. Its spirits are the perfect ingredients to accompany these happy moments.
