1½ oz Récif gin
2 oz Alexis*
½ oz lemon juice
½ oz commercial strawberry syrup
1 egg white
A few drops of Angostura bitters for decoration (optional, but recommended)
Stir the first 5 ingredients in a shaker and dry shake (without ice) for about 20 seconds. Add ice cubes and shake vigorously for another 20 seconds.
Place ice cubes in a highball glass, leaving a little space for the cocktail foam. Pour the contents of the shaker into the glass, double straining it through the shaker strainer and a small fine-mesh strainer.
Wait a few seconds for the foam to appear. If desired, top with a few drops of Angostura bitters. With a toothpick, draw a circle through the Angostura bitters to decorate.
