Whisky Gaspésien
Since 2021, barrels have been waiting and whisky has been aging at the distillery. The first batches, Opus No. 1 and No. 2, were bottled in 2025, and others will follow. With the creative freedom that the Gaspé coast offers us, our whiskies, like all our other spirits, are distinguished by their intense and unique aromatic profile.
With parameters always aimed at generating a high intensity of flavors, our whiskeys are intense and powerful, yet delicate and harmonious. They develop a beautiful complexity of aromas despite a short aging period.
Each of our Opus whiskies highlights the richness of Quebec barley, with flavors of warm spices and orchard fruits, and a caramelized note of burnt sugar.
– Single malt: 100% distilled on site, using only Quebec malted barley
– Long fermentation: 5 to 6 weeks (usually 6 to 7 days in the world of whiskey), because we believe in the development of esters before distillation
– Distillation: in our 100% copper Charentais still, over an open flame, which caramelizes the sugars and triggers the Maillard reaction, resulting in toasted notes
– Non-chill filtered: minimal filtration to preserve all the character
Our Opus whiskeys can be enjoyed like any good whiskey, i.e., at room temperature (neat), or however you like, because after all, whiskey is a pleasure.

Although gin and whiskey are fundamentally different in their production methods, our know–how, expertise, and commitment to quality have been transferred to the creation of our whiskey.
True to our philosophy of always prioritizing the aromatic signature, we choose, throughout the process of creating our whiskeys, what maximizes the intensity of the flavors: the grain, the yeast, the fermentation time, the distillation method, the cask, etc. For each parameter, we go beyond paradigms and yield considerations to create whiskeys without compromise.
