Espiègle

Rich, fruity, slightly woody, and totally Gaspéian, Espiègle is unclassifiable, a true sensory experience, far removed from anything familiar. The vinification of morello cherry and aronia berries brings a delicious red fruit flavor, with notes of cherry liqueur and hints of fortified wine. The addition of maple syrup during fermentation provides characteristic maple aromas, but with great finesse. The blend with maple brandy brings woody and vegetal notes, more reminiscent of agricultural rums than maple liqueurs. The resulting sensory kaleidoscope will appeal to gourmets who, like us, are looking for distinctive spirits.

Espiègle is best enjoyed as a digestif, somewhere between a port and a vermouth.

Living product: The formation of a deposit is normal, as is the change in color. We like that. However, it is recommended to refrigerate the product after opening for greater stability.

An almost psychedelic spirit

Espiègle is extraordinary in its ingredients, flavors, and production process. Inspired by the riches of Gaspé producers, such as maple, aronia, and morello cherry, it relies on the harmony of intense flavors and a complex process to reveal a distinctive and unsettling aromatic signature.

It combines maple brandy, fermented maple syrup distilled with brewer’s yeast, and the result of vinifying sour cherries, aronia berries, and maple syrup, subtly sweetened with honey, all in a single bottle. This dual process makes it such an extraordinary product that it is classified as a non-standardized beverage in the eyes of the law. At the Distillery, we prefer to see it as an almost psychedelic tasting experience that blurs all the lines. It’s our playful take on our expertise and our industry, our way of paving the way and opening the senses.
