True to our philosophy of always prioritizing the aromatic signature, throughout the process of creating our whiskys, we choose what maximizes the intensity of flavors: the grain, the yeast, the fermentation time, the distillation method, the cask, etc. For each parameter, we go beyond paradigms and yield considerations to create whiskys without compromise.
Fermented, distilled, aged, and bottled by the sea
Since 2021, barrels have been patiently waiting and whisky has been aging at the distillery. The first batch, Opus No. 1, was bottled in 2025, and others will follow. With the creative freedom afforded by the Gaspé coast, our whiskys, like all our other spirits, are distinguished by their intense and unique aromatic profile.
